Banana-Blueberry Bread

Once again, I had some over-ripe bananas. Plus, I had some blueberries that I needed to use.

So, after searching the net for some blueberry and banana recipes, I found this one on 
Cooks.com.

It's a keeper!

Banana-Blueberry Bread

2 c. sugar
2 sticks butter
4 eggs
5 bananas, mashed
4 c. flour
3 tsp. allspice
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. vanilla extract
2 c. blueberries
Nuts (optional )

Preheat oven to 325°F degrees.
Grease and flour 2 loaf pans.
Cream together butter and sugar.
Beat in eggs.
Add mashed bananas, then ... 
Stir in 2 cups of flour (reserve 2 tablespoons of the flour for tossing with the blueberries).

Place remaining flour in sifter with dry ingredients.
Sift and fold into banana mixture.
Stir in vanilla.
Sprinkle 2 tablespoons flour over blueberries, then fold into batter.
Divide the batter into 2 loaf pans.
Bake about 50 minutes. [Make sure you check it; my recipe took a little longer!]

    This Banana-Blueberry Bread looks really good. I usually bake breads more in the winter time. I love Banana Nut Bread with my coffee.
