Mississippi Mud Cakes



I found another new great recipe while digging through my recipes for some upcoming celebrations. I made it for my family during the holidays, and they loved it.  

Honesly, I hesitated to post a high-calorie dessert when so many people have committed to cutting back on their calories for the summer. And you might not want any more "mud" in the middle of all the storms and floods right now. But since this in an online blog, I'm hoping you'll stop back by when you need a great "homemade" dessert.
 
This great Mississippi Mud Cake recipe comes from The Best of the Best Cookbook published by The Junior League of Savannah, Inc.

Mississippi Mud Cakes

Ingredients

1 cup margarine
1/2 cup cocoa
4 eggs, well beaten
1 1/2 cups flour, unsifted
2 cups sugar
Dash salt
1 1/2 cups pecans, chopped
1 (6 1/4 oz) bag mini-marshmallows

Directions

* Melt margarine.
* Add cocoa and well-beaten eggs.
* Add flour, sugar, salt, and pecans; mix well.
* Grease and flour a 9x13x2-inch pan.
* Spread mixture into pan.
* Bake at 350* for 30-35 minutes.
* Cake is done when sides pull away from pan.
* Remove from oven.
* Pour 1 package mini-marshmallows over top of cake, while still hot.
* Cover cake and mini-marshmallows with topping.

Topping

1/2 cup margarine, melted
1 pound confectioners sugar
1/2 cup cocoa
1/2 cup milk
1/2 tsp vanilla

* Combine all topping ingredients and mix well.
* Spread over cake.
* Cool completely.
* Cut into 2-inch squares.
