Fresh Apple Cake

Do you love fresh apple cake as much as I do?



Here's a recipe I revised a little from my mother's fresh apple cake recipe. I also included Mother's recipe in this post, just in case you were interested in the original version.

I prepared this recipe in two loaf pans, since there are just two of us in my house now. But if you have a big family, and you don't mind the extra calories, you may prefer Mother's version. Either way, I know you'll enjoy this delicious apple cake. It's a great coffee cake for the holidays!

Fresh Apple Cake (kj's version)

Cake Ingredients

4 cups apples, chopped
2 cups sugar substitute
2 eggs
1 cup applesauce
1 cup walnuts, chopped
2 1/2 cups flour (all-purpose)
2 tsp soda
1 tsp salt
1 tsp cinnamon

Topping ingredients
 
1/2 cup sugar substitute
1/2 tsp cinnamon

Preparation

* Preheat oven to 325°.
* Spray 2 loaf pans.
* Mix sugar substitute and cinnamon for topping in small bowl.
* Dust sprayed pans with half of sugar substitue/cinnamon mixture.

*Combine apples and sugar substitute; let stand in mixing bowl.

In separate bowl
* Beat 2 egg whites until stiff.
* Add 2 egg yokes.
* Add applesauce; beat well and let stand.

In another bowl
* Combine pecans, flour, soda, salt, and cinnamon.

* Pour egg mixture over apples.
* Add dry ingredients.
* Stir well with spoon (do not beat).

* Spoon mixture into the prepared loaf pans.
* Sprinkly remaining sugar substitute/cinnamon mixture over the top.
* Bake 325* for 1 hour (or until browned and a toothpick comes out clean when inserted in the center of a loaf).
*Cool on racks before slicing.

Nelle's Fresh Apple Cake (Mother's version)

Ingredients

4 cups apples, chopped
2 cups sugar
2 eggs
1 cup cooking oil
1 cup pecans, chopped
2 1/2 cups flour (all-purpose)
2 tsp soda
1 tsp salt
1 tsp cinnamon

Preparation

* Combine apples and sugar; let stand in mixing bowl.

In separate bowl
* Beat 2 egg whites until stiff.
* Add 2 egg yokes.
* Add coooking oil; beat well and let stand
.
In another bowl
* Combine pecans, flour, soda, salt, and cinnamon.

* Pour egg mixture over apples.
* Add dry ingredients.
* Stir well with spoon (do not beat).
* Pour into greased and floured tube pan.
*Bake 350* for 1 hour.
